A warming classic meal to gather the family around the table or enjoy as a two on a cold winter night.

A TRADITIONAL family meal that warms and fills. Except this is a little less than traditional.
This 'Chilli Con Carne' isn't only about the spicy tomato based meal, but the accompaniments that go along side it. It may not be a traditional dish or way to serve, but it certainly is delicious.
We also use cannelloni beans instead of red kidney beans, as they are just a preference of the household. They remind us of large baked beans.
I love to pack as much veg as I can into meals and this chilli is no exception. Making the rice with peas and sweetcorn and having the onion and peppers in the chilli. It's a great meal to get those vegetables into your day. Added with the healthy homemade guacamole to add those healthy fats from the avocado. It's a super healthy mid week meal.

INGREDIENTS
Chilli Con Carne
400g Mince Beef (I used 5% fat)
1 Tin of Tomatoes
1 Beef Stock Cube
1 Onion
1 Red Pepper
1 Tin Cannellini Beans
2 Tsp Paprika
1 Red Chilli
1 Chunk of Dark Chocolate
Guacamole
1 Avocado
1/2 Red Onion
1 Tomato
1 Lime (Juice)
1 Red Chilli
(Can add Coriander)
Served With
Nachos
Sour Cream
Rice and Peas
METHOD
Chilli Con Carne
- Heat a pot on the stove over a medium heat
- Slice the onions and peppers
- Cook in the pot with olive oil
- Remove vegetables and add more oil
- Add the mince and brown all over
- Add the vegetables back to the pot
- Put the paprika in and mix, coating the ingredients
- Now add the stock cube, tin of tomatoes and water
- Simmer on a low heat for 1 hour
- Add the cannelloni beans and chilli
- Simmer for another hour on a low heat until rich and delicious
Guacamole
- Slice around the avocado and scoop out the centre into a bowl and mash
- Cut the tomato into small chunks and add
- Dice the red onion and add
- Squeeze half of the lime into the bowl
- Chop the chilli finely and add coriander
- Mix the ingredients until it has a consistence you like, I personally like it chunky
