Coconut Cookies

Coconut sugar is such a fabulous alternative to brown sugar, especially when baking these coconut cookies.

Makes 12 Cookies

10 Minutes Preparation Time

8 Minutes Baking Time


INGREDIENTS

3/4 Cup Oats

1/4 Cup Coconut Flour

1/2 Cup Desiccated Coconut

1/2 Cup Coconut Sugar

1/2 Cup Coconut Oil

1/4 Cup Maple Syrup

1/4 tsp Baking Powder

1/4 tsp Vanilla


METHOD

- Preheat the oven to 180c/350f

- Combine the dry ingredients in a bowl and mix together

- Now add the wet ingredients in a separate bowl

- Pour the wet into the dry and mix until it comes together

- Take a small amount of the mix and place in a 1/8 cup, then push the mix down and flip the cup to put the mixture on the tray, push out slightly with your fingers (I do this to make flattening the cookie out easier, you could form a ball and flatten the mix yourself on the tray)

- Place in the oven and bake

- Take out and leave to cool on the tray, once nearly cooled gently transfer the cookie to a wire rack

- ENJOY!
