Oat Pancakes

These oat pancakes are a little alternative to the traditional flour and equally satisfying. Don't worry though. Oat flour isn't some posh new ingredient on our shelves, its simply blitzed oats. So all you need is oats and a blender.

Serves 2

Preparation Time <5 Minutes

Cooking Time 10 Minutes

1 Egg

60ml Milk

1tbs Olive Oil

80g Oat Flour (Blitzed Oats)

1tbs Caster Sugar

1/2tsp Baking Powder

Pinch of Salt

1tbs Summer Berry Compote

Maple Syrup

Squirty Cream

Fresh Berries

- In a bowl, add the oat flour, sugar, baking powder and salt.

- Now, whisk in the oil and milk, then add the milk. Whisk until it all comes together in a batter.

- Heat a frying pan over a medium heat. Add a little butter each time or spray oil.

- Add 1/5 of the batter to the pan and cook until bubbles form on the top. Flip and cook for a further minute.

- Serve and TOP!

Harriet decided they needed more cream.

Or, have no cream at all!
