Zillionaire Shortbread

If you love a Snickers or the chocolate peanut combination then this is the tray bake for you.

It is a treat and certainly isn't low in calories but it is delicious.


15 Preparation Time

35 Minutes Cooking Time (does not include cooling time)


INGREDIENTS

SHORTBREAD

220g Plain Flour

120g Cornflour

60g Caster Sugar

60g Brown Sugar

220g Butter


PEANUT CARAMEL

1 Can Condensed Milk

2 tbs Maple Syrup

60g Caster Sugar

100g Butter

15g Chopped Peanuts

2 tbs Peanut Butter


CHOCOLATE TOP

200g Chocolate

1tbs Groundnut Oil (Or a light Olive Oil)

10g Crushed Peanuts or peanut butter


METHOD

- Preheat the oven to 170c/340f

- In a bowl gently cream together the sugar and butter for the shortbread base

- Sift in the flour and cornflour and combine using your hands.

- Grease or use baking paper to line a baking tray. Pour the shortbread mix and press down to cover the bottom of the tin. Use a fork to prick the shortbread. Bake in the oven for 25 minutes (or until golden around the edges)

- Leave the shortbread to cool whilst you make the caramel

- Place the condensed milk, syrup, sugar and butter in a pan over a low heat and stir until melted. Scoop in the peanut butter and continue to stir until a nice golden brown.

- Pour the caramel over the shortbread and sprinkle nuts

- Melt the chocolate and oil over a bain-marie or carefully in a microwave.

- Once the caramel has cooled, pour the chocolate over the caramel and spread out to cover evenly

- Add chopped peanuts and cool.

- Then ENJOY!
