Sweet Potato Waffles

If you love sweet potato and you love waffles then this is the recipe for you. Not only that but its sugar free (not including the lovely toppings).

You could top these waffles with anything you desire. Due to the mixture having no sugar its not sweet itself so you could top it with savoury flavours. Fried egg and sliced avocado works wonderfully.


INGREDIENTS

1 Large or 2 smaller sweet potatoes

1/2 Cup Oats

1/2 Cup Flour

1/2 Cup Milk (you can use any milk or plant based milk you like)

1tsp Baking Powder

1tsp Vanilla

2 Eggs

TOPPINGS

Blueberries

Maple Syrup

Peanut Caramel

Crushed Peanuts

Grated Dark Chocolate

You can use whatever you like though. Bacon, strawberries, banana! ANYTHING!


METHOD

- Preheat the oven to 180c/350f

- Poke holes into the sweet potatoes and wrap in tin foil and bake for 45 minutes (or until soft and squishy)

- Add the flour, oats, baking powder, vanilla extract and egg into a blender

- Blitz until combined

- Once the potatoes are ready, scoop out the flesh and add to the mixture

- Blend again until well combined

- Heat your waffle iron

- Add the mixture and cook for 5 minutes, some people like a brown crisp waffle so go as brown as you like

- Enjoy with delicious toppings!
